Raving about Ravioli

Is there anything better than stuffed pasta? Possibly, but that’s a hard thing to prove. A dish that dates back to the 14th century, ravioli and tortellini are a staple in every Italian home and now it can be in yours as well. In this class we will go over the characteristics in an egg dough, learn how to shape and fill ravioli and tortellini and pair them with a delicious sauce to make any home entertainment not only tasty but fun. You will also learn the traditional way of making Tiramisu to end the evening with something sweet.

First Course

Fried butternut squash ravioli served with amaretto cookie crumb, shaved grana padano, pumpkin seed oil and port wine reduction with candied pine nuts

Second Course

Spinach and ricotta tortellini with roasted pomodoro sauce, Italian sausage, basil and grated parmigiana reggiano

Third Course

Tiramisu, coffee anglaise, fresh raspberry
